Depending on what time of year you visit Exhale (February to April) you can experience the delights of fig picking just down the road, at the beautiful Glen Ewin Estate.
We invite you to tantalise your taste buds with a delightful recipe that celebrates the essence of Glen Ewin figs.
Ingredients:
1 pre-made pizza dough (or homemade if preferred)
6-8 fresh figs, sliced
4-6 slices of prosciutto, torn into smaller pieces
1 cup rocket leaves
130 grams of goat cheese, crumbled
1 tablespoon balsamic glaze
2 tablespoons extra virgin olive oil
Salt and pepper, to taste
Instructions:
Preheat the oven: Preheat your oven to the temperature specified on your pre-made pizza dough or according to your homemade dough recipe.
Prepare the dough: Roll out the pizza dough on a floured surface to your desired thickness. Place the rolled-out dough on a baking sheet or pizza stone.
Drizzle olive oil: Drizzle the extra virgin olive oil over the dough, spreading it evenly with a brush or the back of a spoon.
Arrange the toppings: Evenly distribute the sliced figs and torn prosciutto over the dough. Sprinkle the crumbled goat cheese on top. Season with salt and pepper to taste.
Bake: Place the flatbread in the preheated oven and bake according to the instructions on your pre-made dough or your homemade dough recipe. Typically, this takes around 12-15 minutes, or until the crust is golden brown and the cheese has melted.
Add finishing touches: Remove the flatbread from the oven and let it cool slightly. Top with fresh rocket leaves and drizzle balsamic glaze over the entire flatbread for a delightful tangy-sweet touch.
Serve and enjoy: Cut the flatbread into slices and serve it as an appetizer, a light lunch, or a delightful addition to a charcuterie board. The combination of flavours, with the sweetness of the figs, the saltiness of the prosciutto, and the creaminess of the goat cheese, is sure to impress your taste buds.
