400g linguine or spaghetti
2 tbsp olive oil
4 tbsp unsalted butter
4 garlic cloves, finely minced
300g raw prawns, peeled and deveined
Zest and juice of 1 lemon
1/2 cup dry white wine (optional, but highly recommended)
1/4 cup fresh parsley, chopped
Salt and pepper, to taste
Freshly grated Parmesan cheese, to serve
Method:
Cook the Pasta: Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
Prepare the Sauce: In a large frying pan, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Be careful not to let it burn.
